Ingredients
- 1 onion, halved
- 1 clove garlic
- 1 carrot, quartered
- 30 grams olive oil
- 400 grams Roma tomatoes, quartered
- 300 grams water
- 200 grams cream
- 1 tablespoon TM vegetable concentrated stock
- 300 grams pasta of choice
- 100 grams semi dried tomatos
- 100 grams Olives, pitted and halved
- 1/2 bunch parsley

Place onion, garlic and parlsey into TM bowl, chop 5 seconds, speed 7.
Add carrot, chop 3 seconds, speed 5.
Add oil and sautee, 100*C, 1-2 minutes, speed 1.
Add tomatos, water, cream, vegetable concentrate and cook 10 minutes, 100*C, speed 1.
Add pasta and incorporate into sauce. Add semi dried tomatos and olives.
Cook 7-10 minutes, 100*C, Reverse "Counter-clockwise operation" , speed soft "Gentle stir setting" .
Serve topped with extra cheese and parsley is desired.
Tip
For a vegan version, replace cream with Tofutti cream cheese (same amount) and omit extra cheese in last step.

Yummo. I made it just as a sauce to go with ravioli so the sauce was a bit runny. Fixed that with a bit of cornflour. Could hide more veggies in there than just the carrot and tomato next time I think!!

Beautiful dish. I'll probably add a splash (30mL) of red wine next time.
Also, I cooked 300g of pasta seperate not realising it cooks in the TM as part of the recipe. I threw the remaining 200g of uncooked pasta from the packet into the TM as per the steps in the recipe and then I stirred the finished product into the extra pasta in a seperate bowl along with a small sprinkling of parmesan and mozzarella.
This step of adding extra cooked pasta worked well as I'm not a fan of gluggy pasta - which is what I find happens with TMX dishes where the pasta has cooked in the sauce.
Result was great. With the 500g of pasta we had an easy 5-6 serves.
Delicious! I added only about 250g wholemeal pasta to make sure it was sauce-y enough and cooked for an extra 4 minutes at the end. I also added heaps of other vegies to use up what was in the fridge. Yummmmmm!
Great flavour! I added a couple of portabello mushrooms and some extra water, but it ended up a little too al dente for me. I'll cook it for longer next time.
