Ingredients
- 2 Medium potatoes, chopped into chunks
- 2 carrots, chopped into chunks
- 1 onion, peeled and halved
- 2 cloves of garlic, peeled
- 2 eggs
- 1 tsp salt
- 1 tsp paprika
- 1 tbsp Butter or coconut oil
- 1/4 cup parsley, chopped in TM
- 1/2 cup wholmeal breadcrumbs
- 1/4 tsp ground black pepper
- 120 g Tasty cheese, grated in TM
- 250 g yoghurt
- 1/2 Capsicum, chopped
- 1/4 Cup Spring Onions, chopped

Preheat the oven to 180deg and grease an ovenproof dish
Put the onion and garlic in the TM bowl - chop 3sec/sp7
Add carrots and potato to the TM bowl and chop - 4sec/sp4 or until they're at a grated consistency.
Set mixture aside.
Put eggs, salt, paprika and butter/oil into TM bowl and beat - 10sec/sp4
Add parsley, breadcrumbs and pepper and mix - 3sec/sp4
Add potato/carrot mix and mix - 6sec/sp3 "Counter-clockwise operation" or untill well combined.
Pour into oven proof dish and bake for 30mins
Meanwhile, put cheese, yoghurt, capsicum and spring onin into TM bowl and mix - 6sec/sp2"Counter-clockwise operation"
Pour cheese mixture over the baked vegies and bake for a further 15 mins
Tip
This bake can be served hot or cold

Followed recipe but added a few extra veggies, not sure what I did wrong but not very tasty and lots of liquid in the bottom.
Will definitely give it another try though =-)
Really enjoyed this, it's quite flexible with the veggies used. I added sweet potato, spinach and some sauteed mushrooms to the bottom layer.

Came here looking for a pie filling, became distracted and now making this for dinner. Adding my own flavour to it, which translates to "Cr*p, do not have any of <ingredient x>, lets try it with what is in the fridge and pantry.
I also added a layer of thinly sliced courgette (Zuchini) between the first layer and the cheese layer. Had to as the zuchini was starting to look sad and the worm farm gets enough veges as it is!
Very easy and tasty. I also had some leftover chicken that I shredded and added to bake. I will put some olives and tomato slices on top next time.
This is really healthy. I added extra vege, poached some chicken breast then shredded it and added about 300g to this dish & used half of the cheese. Didn't have yoghurt so I used a can of light Evaporitive milk instead. Delish! Thanks for posting.
