Sweet potato and chickpea kofta curry lime dressing
- 500g sweet potato, Peeled and chopped into cubes
- 400g Chickpeas drained
- 1/2 cup coriander
- 100g breadcrumbs, Approx add more if needed
- 1/4tsp garam masala
- 1 egg
- salt and pepper to season
Coleslaw
- 150g cabbage, red, Approx 1/4 cabbage
- 150g cabbage, Approx 1/4 cabbage
- 4 spring onions, Sliced diagonally
Dressing
- 1cup plain yoghurt
- 1tbs lime juice
- 3/4tsp curry powder

- Put sweet potato into jug process 3sec/sp 7 scrape down repeat till smooth
add coriander and chickpeas chop 2sec/ speed 3 scrape down you want mixture a little coarse repeat if needed add breadcrumbs and egg ,season and mix 5 secs speed 4/ rev you may need to mix use spatula at end to make sure all combined,roll tablespoons into require shape I used small ice cream scoop,now the recipe said to fry I found bit greasy so I cooked on baking sheet for about 20mins /180 turning half way cook 7ntil till brown - Add dressing ingredients to bowl mix 5 sec / speed 4 scrape down put half into a bowl to serve with Koftas, add cabbage to bowl with remaining dressing and chop 2-3 secs speed4
Stir through spring onions with spatula
serve with koftas and dressing

Recipe from west Australian,I didn't see need to cook sweet potato they were delicious hot I'd make dressing and salad first to serve straight away although hubby ate them cold 😊
