Ingredients
- 800 g water
- 80 g Shredded or Desiccated Coconut
- 1 red onion
- 20 g coconut oil
- 2-3 carrots (roughly chopped)
- 1 small to medium, turnip (roughly chopped)
- 2-3 Large sweet potato (enough to make up 950g to 1kg worth of vegetables), (roughly chopped)
- 2 tablespoon TM vegetable stock concentrate
- 1 teaspoon red curry paste

1. Place coconut and water into bowl. Blitz on spd 9 for 2 mins.
2. Remove contents into your server and place bowl back on TM. Add onion and chop on spd 7 for 3 secs. Scrape sides of bow.
3. Saute for 3 mins, 100C, spd 1.
4. Add coconut milk to bowl and blitz for 30 secs spd 10.
5. Add the rest of the ingredients and cook for 25mins, 110C on spd 1.
6. Blitz for 1 min on spd 9.
7. Serve.
Tip
*If you like more heat, add another 1/2 to 1 teaspoon of curry paste.
*If you prefer the soup less thick, add less veggies by 100 to 150g.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
