SWEET POTATO, KALE & QUINOA FRITTER
- 170 g quinoa
- 100 g Kale
- 2 eggs
- 15g g cornflour
- 2 g ginger, grated
- 1 tsp smoked paprika
- 1 tsp Salt & Pepper
- breadcrumbs, 1/2cup dry or panko
- 1 heaped tablespoon Moroccan spice
- 4-6 tablespoons oil, (coconut,peanut,grapeseed)
- 40 g vegetable stock
- 3 Cup sweet potato, diced

- 1. Rinse quinoa well using a fine sieve, place quinoa in TM basket, place basket into TM bowl that been filled wih 900g water, add vegie stock.
2. Peel and dice sweet potato into 2cm cubes and place into varoma.
3. Cook quinoa and potato 30min Varoma Sp2
4. In a medium bowl place quinoa
5. Insert butterfly blade in TM bowl add potato (make sure potato is cooked soft) mash for 20sec SP3 push down do for another 10sec if needed.a
6. Add potato to quinoa bowl.
7. Devien the Kale add to TM bowl chop for 10sec SP5 add to quinoa bowl.
8. Place all other ingrediants except oil into bowl with quinoa and mix well.
9. Add oil to pan and fry patties 3-4min each side until golden.

Very tasty. I didnt know how much sweet potato so I just guessed. Made my own moroccan spice and Added some tumeric too. Passed the hubby test so will be making again. thanks
Sweet Potatoes aren't mentioned in the ingredient list so I guessed that only one sweet potato was required. The mix was quite messy to form into fritters. I made 11 fritters. Tasted quite nice. Thanks for the recipe.
