Ingredients
- 200 g brown lentils, soaked in water for an hour
- 1 brown onion, peeled and quartered
- 2 cloves garlic
- 200 g mushrooms, quartered
- 2 zucchini, chopped into pieces
- 1 carrot, chopped into pieces
- 2 sticks Celery, chopped into pieces
- 2 bay leaves
- 1 tsp Dried oregano (or fresh)
- 400 g tin diced tomatoes
- 2 tbsp tomato paste
- 25 g water
- 1 tsp honey
- 1 tbsp soy sauce

Drain soaking water from lentils, rinse well and drain again.
Place carrot, celery and zucchini into the bowl and, with lid in closed position, turbo 2-3 times. Set mix aside.
Place onion and garlic into the bowl. Chop for 3 sec on speed 5.
Add water and saute for 2 min, 100 degrees, speed 1.
Add lentils, mushroom, reserved carrot, celery and zucchini mix, bay leaves, oregano, diced tomatoes and tomato paste. Cook for 30mins, 100 degrees, reverse, speed 1-2.
Add soy sauce and honey. Mix for 30sec, reverse, speed 1-2.
Remove bay leaves, season with salt and pepper then serve with pasta of your choice.
For a creamier consistency, mix the sauce by slowly turning dial to speed 7 until the desired consistency is achieved.
