Ingredients
Zucchini and Haloumi Frittera with Yoghurt and Salsa
- 4 zucchini
- 125 g haloumi cheese
- 1/4 C Flat Leaf Parsley lightly ripped
- 1 C Gluten free Breadcrumbs
- 2 eggs
- 1 red onion
Salsa
- 4 Tomatoes, cut into quarters
- 1 Cucumber cut into quarters
- 1/3 C torn mint leaves
- 3/4 C plain greek yoghurt

- Add Zucchini, 1/2 red onion and Haloumi and parsley into bowl, grate 5secs speed 10
Add Breadcrumbs, eggs, place lid on with measuring cup inserted combine 6secs speed 4
Heat non stick fry pan med-high, add a spray of oil. Drop 3-4 heaped tablespoons of batter to hot pan and cook for 3-4mins each side or until golden brown
To prep salsa:
Cut tomatoes, cucumber into quarters and combine in small bowl with remaining onion and mint.
To serve:
Place fritters on plate, add salsa to the sides and a dolop of yoghurt on top of the fritters
Method:
Tip
You can replace zucchini with carrot
Use can use normal breadcrumbs if you don't want it gluten free
