  • 540 g pasta, dried

Chicken and Veg

  • 800 g chicken breast, Diced
  • 4 pinches salt
  • 4 pinches pepper, ground
  • 2 level teaspoons extra virgin olive oil
  • 2 leeks, Finely diced
  • 2 cloves garlic, Crushed
  • 2 bunches broccoli, Finely chopped
  • 400 g button mushrooms, Sliced
  • 400 g peas, baby, frozen

Cheese Sauce

  • 70 g Flour, Plain
  • 1.5 litres low fat milk
  • 100 g Cheddar cheese, Grated
  • .5 level teaspoons Nutmeg
  • .5 level teaspoons paprika

Recipe's preparation

    Method
  1. 1. Preheat the oven to 190°C.
    2.Cook the pasta:
    •Add 1.5L water to the Thermomix bowl.
    •Insert simmering basket, add the pasta, and cook for the time specified on the packet at 100°C / Speed 4. Drain and set aside.
    3.Cook the chicken:
    •Add 10ml olive oil to the Thermomix bowl.
    •Add diced chicken, 4 pinches of salt, and 4 pinches of pepper. Sauté for 10 minutes / 100°C / Reverse Speed 1 or until cooked through. Set aside.
    4.Prepare the veggies:
    •Without cleaning the bowl, add leeks and garlic. Chop for 5 seconds / Speed 5.
    •Scrape down the sides, add broccoli, mushrooms, and peas, then sauté for 7 minutes / 100°C / Reverse Speed 1.
    5.Make the sauce:
    •Add 70g flour and cook for 2 minutes / 100°C / Speed 2.
    •Slowly add 1.5L milk, cooking for 10 minutes / 90°C / Speed 3 until it thickens slightly.
    •Add grated cheese, nutmeg, paprika, salt, and pepper. Mix for 30 seconds / Speed 3 until smooth.
    6.Combine the ingredients:
    •Add the cooked pasta and chicken to the bowl. Mix for 20 seconds / Reverse Speed 2.
    7.Bake:
    •Transfer the mixture to an oven-safe dish and bake for 25 minutes or until the top is golden brown.
    8.Serve:
    •Divide into 8 portions and store any leftovers in the fridge.
