Ingredients
Greek rice with leeks
- 1 tbsp olive oil
- 1/2 onion, cut in half
- 3 cloves garlic
- 3 spring onions
- 1 leek, cleaned and sliced
- 150 grams brown, green or long grain white rice
- 3/4 litre Vegetable or chicken stock
- 1 tbsp fresh oregano, or 1/2 tsp dried
- 3 tbsp fresh parsley, chopped
- 2 tablespoon pine nuts
- salt
- black pepper

Place onion, garlic, and spring onions in TM bowl and chop for 5 seconds, speed 5. Scrape down sides of TM bowl.
Scrape down sides. Add oil and sliced leek and cook at Varoma temperature, stir speed reverse for 5 min.
Add rice, stock, oregano, salt and pepper. Cook for 15 minutes at 100 degrees, stir speed reverse.
Check to see if the rice is cooked. If not, continue cooking for five minutes. Add water, if necessary. The cooking time depends on the rice, of course. The mix should be a bit fluid as it will firm up a little when it cools.
Add chopped parsley and pine nuts and blend at stir speed reverse for 30 seconds.
