- 400 g basmati rice, or jasmine rice
- 500 g water
- 400 g ml Tin coconut milk, or coconut cream
- 1 Kaffir lime leaf, optional

Weigh rice into Thermomix basket, in the Thermomix bowl.
Rinse rice with water from the tap in the sink, return basket with rinsed rice to the TM bowl.
Add water, coconut milk or cream and lime leaf into TMX bowl with the rice in the simmering basket. Cook 20 minutes, varoma, speed 4.
Place into the Thermoserver to keep warm until ready to serve.

Tip
Because this is cooked on Varoma temperature, it's great to steam some extra veg at the same time.
This rice is great to serve with Thai or Indian curries!!

This recipe is great! I have a TM5 so followed the suggestion of 1200g liquid (400ml tin coconut cream, rest water) but also soaked the basmati rice for 30 minutes beforehand. Cooked 20 minutes on Varoma temp and I steamed veg in the Varoma. We like a stronger coconut flavour so will try 50/50 c.cream and water next time but the rice was perfectly fluffy! I'll be using this recipe again, so thank you for sharing

Failure. Dry and undercooked even after 30mins. Saved by another users suggestion of adding to leftover water /milk to soak in.
Cooked perfectly and nice and fluffy but although it has subtle coconut flavour ( I used coconut cream instead of milk and I poured remaining liquid over rice to soak in for more flavour) it still didn't taste like the Thai ones. Do you think they add sugar or something for that sweet coconut taste?

Looking at about 180g of rice for 2 ppl.
