  • 500 g pumpkin, skin removed and diced into 4 cm cubes
  • 1 small onion, quartered
  • 1 carrot, cut into 4
  • 1 Celery, cut into 4
  • 600 g vegetable stock or water
  • --- olive oil, as needed
  • Balsamic Vinegar, as needed
  • 8-10 prawns ,raw, medium
  • Fresh chives for garnish

Recipe's preparation

    Method
  1. 1. Heat oven to 190c .

    2. Remove the skin off the pumpkin and dice into large cubes.

    Place on a baking tray and drizzel with olive oil and balsamic vinegar. Toss pumpkin so they are all covered. 

    3. Roast for 30-45minutes. Remove from oven and season with salt and pepper. Put aside

  2. 4. Chop onion, carrot and celery in Tm bowl. 30sec / Speed 5

    5. Scrape down side add 10g of oil and saute. 3min/V/Speed 1.

    6. Add roasted pumpkin and vegetable stock, cook. 15min/100c/ Speed 2.

    7. Add Prawns cook. 4min/100c/Counter-clockwise operation"Counter-clockwise operation" /Speed 2. Taste and adjust seasoning.

    Make sure everyone has 2 prawns each when serving. Garnish with fresh chives.

Tip

Can add a dollop of cream before serving to each bowl.

Can replace prawns with raw scallops.
