Ingredients
Soup
- 250 grams chicken breast, Diced
- 2 chorizo sausages, Diced
- 2 sticks Celery, Quartered
- 2 carrots, Quartered
- 2 leeks, Quartered
- 2 cloves garlic
- 50 grams brown rice
- 1/2 Capsicum, Diced
- 1 400g tin diced tomatoes
- 2 level tbsp Veg Stock Concentrate
- 1 litre water
- 1 400g tin chickpeas, Drained
- 2 Cups Baby Spinach

Add Garlic, Leek, Carrot and Celery to bowl. Chop 3sec/Sp 5. Scrape down sides then saute 3 min/100deg/Sp 1.
Add Chicken and Chorizo. Cook 3 min/100 deg/ Sp 1.
Add Rice, Capsicum, Stock Concentrate, Water and Tin of Tomatoes. Cook 25 mins/100deg/Reverse/Sp 1
Place drained chickpeas and spinach into large bowl or Thermoserver. Pour soup over the top and allow to rest with the lid on for 5 mins for the spinach to wilt and the chickpeas to heat through.
Tip
You could steam additional vegetables in the Varoma if you wish whilst the soup is cooking. You will need to up the temp to Varoma instead.

Loved this soup! I didn't add chorizo - don't think it needed it either. Next time i might add some ginger too. Thanks for an easy ands yummy recipe
This is one of the first things I've made in the thermie , so easy and quick. I just use a couple of slices of bacon instead of chorizo .. It has become a family favourite.. even my fussy 3 year old loves it . Thank you

Is it 250g or 500grams? In the receipe you have put two x 250 g chicken?
