Ingredients
Chicken, Ginger and Turmeric Soup with Pearl Couscous
- 6 cloves garlic
- 20 g ginger, sliced into discs
- 20 g Fresh Turmeric, or 1 tsp ground turmeric
- 1 sprig rosemary, leaves only
- 20 g olive oil
- 1 brown onion (100g), halved
- 1 carrot (100g), cut into large pieces
- 2 celery sticks (100g), cut into pieces
- 1 litre water
- 20 g chicken stock paste
- 500 g chicken thighs, cut into pieces
- 1 Pinch salt
- ground black pepper
- 100 g pearl couscous
- 100g frozen peas

- Add garlic, ginger, turmeric and rosemary to the bowl and chop, 3 seconds, speed 7.
- Add oil and cook 5 minutes, 100 degrees, speed 1.
- Add onion, carrot and celery to the bowl and chop, 3 seconds, speed 5. Scrape down bowl with spatula.
- Cook for 10 minutes, 100 degrees, speed 1.
- Add water, chicken stock paste, chicken, salt and pepper and cook for 10 minutes, varoma, "Counter-clockwise operation" , "Gentle stir setting" .
- Add pearl couscous and cook for a further 15 minutes, 100 degrees, "Counter-clockwise operation" , "Gentle stir setting" .
- Add peas, stir through with a spatula and leave to rest for 10-15 minutes.
- I find the soup is even better the next day once it has thickened more but is still delicious when eaten fresh!
Tip
To make vegetarian, substitute vegetable stock paste for the chicken stock paste and use a 400g tin of chickpeas in place of the chicken thighs.
