Ingredients
Roasted Capsicum and Tomato Soup
- 2 rec capsicum (about 600g total weight)
- 1 medium onion quartered
- clove garlic
- 30 grams oil
- 2 400g cans chopped tomatoes
- 1 tablespoon vegetable stock concentrate
- 300 grams water

Roast capsicums (I do this on the bar-b-q until the skins are well blackened and then put them in plastic bag to cool. Then peel and de-seed. You should be left with about 400g roasted capsicum flesh)
Chop onion and garlic 3 sec speed 7
Add oil and sauté 3 minutes Varoma temperature, speed 1
Add tomatoes, capsicum, vegetable stock concentrate and water and cook for 20 mins 100 degrees speed soft
Blend for 1 minute by going slowly from speed 1 to speed 8
Serve drizzled with cream and a sprinkle of parmesan or alternatively 80g soft goats cheese.
