Ingredients
Vegan Vegetable, Quinoa and TVP Soup
- 2 clove garlic
- 1 brown onion, halved
- 30 g olive oil
- 150 g Swede, chopped into 1cm pieces
- 750 g water
- 2 tbsp Thermomix Stock
- 100 g quinoa, rinsed
- 60 g TVP
- 100 g Celery, chopped
- 1 carrot, chopped

1. Place garlic and onion in Thermomix bowl and chop for 3 seconds / speed 7. Scrape down sides of bowl.
2. Add oil sauté for 3 minutes /Varoma / speed 1.
3. Add swede, 600g water, stock concentrate and quinoa and cook for 5 minutes / 100 C / "Counter-clockwise operation" /"Gentle stir setting" .
4. Add TVP and cook for another 6 minutes / 100 C / "Counter-clockwise operation" / "Gentle stir setting" .
5. Add remaining vegetables and remaining water and cook for another 15 minutes / 100 C / "Counter-clockwise operation" / "Gentle stir setting" .

Tip
Other root vegetables can be used just alter quantities

Hiya! TVP is textured vegetable protein (also known as soy protein). I get it at the health food shop (around $3 for 500g and it goes a long way!). It has the texture of chicken mince and has a nutty flavour. Great meat free alternative to bulk up stews and soups, as it complete protein and contains no fat
