Parmesan Gelato
- 150 grams Parmesan cheese
- 350 grams double cream
- 1 pinch paprika
Balsamic Reduction
- 250 grams balsamic vinegar
- 30 grams honey
Toast
- 1 piece ciabatta
- 1 tbsp red wine
- 1 clove garlic

Grate the parmesan in the TM on speed 9 for 10 secs.
Add the cream and paprika and on Temp 60 oC and speed 3 for approx 5 minutes until the parmesan has melted. Run the mixture through a sieve to strain out any parmesan that hasn’t melted and place in a container in the fridge over night.Put vinegar and honey into Thermomix and cook for 18 minutes on Varoma speed 1 MC off.
Cut bread loaf into pieces and drizzle with olive oil and red wine. Toast under oven grill until browned and rub garlic over bread

Tip
Spoon a small scoop of the parmesan gelato and drizzle some of the balsamic glaze over the top.

This recipe is very impressive. I made it about a month ago when some friends came for tea. I wasnt sure to begin with if it was a desert or an entree but served it as an entree. My friends were so impressed I have made it a couple of times since, love it!
