Ingredients

Muffin

  • 1 zucchini, Chopped into 3 pieces
  • 4 apples, Peeled, cored and quartered
  • 150 grams almonds
  • 150 grams brown rice flour
  • 145 grams Maple syrup
  • 65 grams Milk (or Almond milk if you have it)
  • 45 grams medjool dates, Pitted
  • 1 tablespoon coconut oil
  • 1 tablespoon cinnamon

Topping

  • 75 grams oats
  • 100 grams walnuts
  • 160 grams medjool dates
  • 2 tablespoons Maple syrup
  • 1 tablespoon coconut oil

Recipe's preparation

    Pre-heat oven to 200 degrees celsius.
  1. Describe the preparation steps of your recipe

  2. Prepare muffin mixture
  3. Place the apples into the mixing bowl and chop for 5 secs on speed 4.5 or until desired consistency is reached. Set aside.

    Place the zucchini into the mixing bowl, grate for 5 secs on speed 5. Add to bowl of apples.

    Mill almonds for 30 secs on speed 9, until a flour forms (you can mill your own brown rice here as well, I had pre-prepared brown rice flour)

    Add the apple & zucchini mix as well as all other ingredients and blend for 20 secs on speed 7.

  4. Add the oaty topping
  5. -Place all the ingredients into the mixing bowl (the recipe used pecans here but I used walnuts) and process for 10 secs on speed 7 or until a sticky crumble-like mixture forms.

     

    -After the muffins have cooked for 20 mins, take them out and spread the topping evenly on each one.

     

    -Cook for a further 10 mins.

  6. Cool the muffins
  7. -Stick a knife in one to check that the mixture is cooked (it will come out clean with a few crumbles stuck to it).

     

    -Allow them to cool for 20 mins as they will finish setting. 

     

    -They are quite dense muffins and will still be very moist. They tasted the best the next day!

Tip

You can make this dairy free by using almond milk instead of normal milk.

You can make this gluten free by using just nuts in the topping and omitting the oats.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
