Ingredients
Mixture
- 100 g Cheddar cheese, chopped into 4cm blocks
- 1 onion, quatered
- 3 bacon rashers
- 1 Large carrot, quartered
- 1 large zucchini, quatered
- 30 g olive oil
- 3 eggs
- 60 g cream
- 75 g Self Raising Flour

Preheat oven to 170 deg
Grease a 12 capacity muffin tray
Place 100g cheddar cheese into TM bowl, roughly grate for 8 sec, speed 9
Remove and place grated cheese aside
Place onion, bacon, carrot, zuchini into TM bowl and chop for 4 sec, speed 7
Add 30g olive oil
Saute using varoma setting for 5 minutes, speed 1
Remove TM bowl from base and set aside to cool for 5 minutes
Replace bowl onto unit and add cheese, 3 eggs, 60g cream and mix
for 5 sec, speed 3.
Add 75g self raising flour and mix for 5 sec, speed 3
Pour mixture into muffin tins
Bake for 15-20 mins or until golden on top
Cool in tins for 5 minutes before turning onto wire rack to cool
Tip
You could use a 24 capacity mini muffin tin for bite size
You could also use a square or rectangular slice tin and then cut into small squares
This recipe can be frozen for up to 2 months in ziplock or freezer proof containers
Any combination of vege could be used for example you could use capsicum or broccoli or even tomatoes
You can substitute the bacon for 3 slices of ham off the bone
You can substitute the self raising flour for rice flour for gluten free option ( just remember to mill your rice first)

The taste was great but found they did not firm up enough after cooking. Will try and add some more flour next time.
Thanks for the recipe. They are awesome! They freeze really well for school lunches and a big winner with all of my family and friends.
I love these! I also used milk instead of cream and added red capsicum and baby spinach. My kids didn't like them (fussy things!) but I thought they were really tasty. I'm going to make them regularly because I won't have to share them!!

Really ? Sorry to hear that. This is an old favourite recipe of mine that I converted to the Thermo ....
I don't know what I did differently to you, but these turned out terrible ended up in the bin
