Ingredients

  • 200 grams tasty cheese, cubed
  • 375 grams zucchini, Cut in to 3cm chunks
  • 1 clove garlic
  • 1 onion, Quartered
  • 5-6 slices Short Cut Bacon Rashers
  • 150 grams Self Raising Flour
  • 60 grams ev olive oil
  • 5 large eggs
  • salt
  • pepper

Recipe's preparation

    Method
  1. Grate tasty cheese 15 seconds, speed 5.5. Set aside. 

     

  2. Without washing the bowl, grate zucchnini 2 seconds, speed 5. Set aside.

     

  3. Without washing the bowl, chop garlic 5 seconds, speed 9. Scrape down sides.

     

  4. Add onion (quartered) and bacon (whole rashers), and chop for 2 seconds, speed 5. Saute for 4 minutes, Varoma temp, reverse, speed 1.

     

  5. Into the thermomix bowl add the SR flour, oil, and eggs. Mix for 12 seconds, reverse, speed 3.

     

  6. Add in reserved grated cheese and zucchini, salt, and pepper. Mix together for 25 seconds, reverse, speed 3. If needed scrape down sides and mix for a further 5-10 seconds, reverse, speed 3 until all combined.

     

  7. Pour in to a 20 x 30cm tin, lined with baking paper. Bake at 180 degrees for 30 mins until lightly golden on top. Enjoy!

    A year in nearly this is still made in our house very regularly. Always such a winner and so delicious!

    I add a carrot and I also add the oil to sauté the onion and bacon, instead of adding it after that's been done. I find I can taste the oil if I don't use it to sauté ( just never been a fan of any oil taste, people think I'm crazy cause they can't taste it lol)

    My breakfast lunch or dinner. Freezes perfectly and delicious! I also add feta chunks and dill to mix it up every now and again, love it

    Delicious tmrc_emoticons.) It took longer than 30 minutes to cook and I thought I must have mucked it up when I took it out of the oven as it was very 'wet' but once it cooled a bit it set beautifully. Both my kids loved it, including the child who hates zucchini so it's a win for us tmrc_emoticons.)

    All the staff at my hubbys work are all super jealous of his lunches! i do this with a foccacia or rice salad and freeze them  into portions for him to take to work!

    This is delicious! my family love zucchini slice but with a a injured wrist, grating all the zucchini was too much, so I stopped making it as much. Finding this recipe and making just now, is a godsend!! all the kids ( and my friend and her daughter) loved it!!  I added a carrot also ( so 400g all up)... Definitely adding this to my favourites!!!!

    My new favourite zucchini slice recipe! The decent size chunks of zucchini make this delish! I also added one carrot just for a bit more veg.
