Quiche Ingredients

  • 1 onion, large, Quartered
  • 2 zucchini, Roughly chopped
  • 2 carrot, Roughly chopped
  • 100 grams bacon, Roughly chopped
  • 5 eggs
  • 200 grams Self Raising Flour
  • 30 grams coconut oil
  • pinch salt to taste
  • pinch pepper to taste
  • 2 heaped tablespoons savoury yeast flakes

Recipe's preparation

  1. Preheat oven to 170 degrees celcius.

    Place carrot, zucchini, onion, and bacon in the TM bowl and chop on speed 5 for 3-4 seconds. Set aside. 

    Add SR flour, coconut oil, eggs, salt/pepper and savoury yeast flakes to the TM bowl and mix on speed 3 for 40 seconds on reverse.Counter-clockwise operation"Counter-clockwise operation"

    Pour mixture into a lined baking tray and bake in a pre-heated moderate oven for approximately 30 minutes or until golden brown. 

    Serve warm or cold, or freeze into portions. These are great snacks for kids lunchboxes! Yum!

Tip

You can add other/different vegies according to what you like!

    Great DF option, my 2.5yr old DF boy loved it! Next time I might saute the onion, zucchini and carrot in the bowl a little bit as our carrot was quite crunchy.

    I have made this twice now and it has been a good alternative to other cheesy zucchini slice recipes, although the first time I found it too dry. The second time I made it I used 90g canola oil and it was a bit too wet, so perhaps next time I'll try only 60g! The nutritional yeast adds a great flavour and I'm slowly starting to learn how to cook with it now we are mainly cooking dairy free.  I sometimes use a combination of any veggies or just zucchini, as long as they add up to roughly 380g.

    Was amazing as waffles! I also used GF flour.  I put the waffles in the toaster and they were great the next day for breakfast too.
