Ingredients

Empanada

  • 250 grams of tomato passata
  • 1 heaped tablespoon of pickled Jalapeno
  • 1 level tablespoons of the jalapeno juice
  • 2 heaped tablespoons of chopped corianader
  • 1 level teaspoons of olive oil
  • 1 small red onion, peeled and quartered
  • 1 clove of garlic, peeled
  • 200 grams of minced beef
  • 1 heaped teaspoon of tomato paste
  • 1/4 teaspoon ground cumin
  • pinch of sweet paprika
  • 3 sheets of ready made shortcrust pastry
  • 1 egg yolk

Recipe's preparation

  1. Spicy Sauce
    Add the Jalapenos and the juice to the bowl with the passata and cook for five minutes, 100 deg, speed 2 -- then blend speed 6 - set aside in a bowl and when cool add the coriander

    Filling
    With out washing the bowl add the onion and garlic - chop 3 seconds speed 6
    Add the olive oil and the minced beef and spices - blend 4 seconds, speed 4
    Cook for 5 mins, 100 degs, speed 2, MC off - set aside
    For your shortcrust pasty you will need a cutter 7.5cm or 3",
    5 rounds for each sheet plus one ( I cut 19)
    When your sheets have defrosted cut the rounds and place a small spoon full of mince to the centre - fold over to enclose and crimp the edges with a fork
    When all have been done brush with an egg yolk wash using a pastry brush

    If using an air fryer place as many as you can to the basket and cook 15 mins 180deg and then turn them over and cook 5 mins 180deg
    Oven instructions 180deg for 30 -35 till golden brown

    Serve with the spicy sauce for dipping and with extra sliced Jalapenos on the side

    More please! While they were cooking, the smell was so good and didn't disappoint. These Empanadas are delicious and keep you taking another, even after your hunger has been satisfied. Definitely a keeper.
