Ingredients

The Muffins

  • 150 grams sorghum flour
  • 150 grams potato starch
  • 80 grams millet flour
  • 2 teaspoons LSA (linseeds, sunflower seeds, almonds) or Psyllium Husks
  • 180 grams water
  • 180 grams Almond milk
  • 1 teaspoon raw sugar
  • 2 1/2 teaspoons dry yeast
  • 4 tablespoons coconut oil
  • 2 tablespoons honey or agave
  • 2 eggs
  • 1 1/4 teaspoons fine sea salt

Recipe's preparation

    English Muffins
  1. Start with adding water, milk, sugar and yeast to the Closed lid"Closed lid" , then turn the thermomix onto 2 minutes, temperature 37°C and speed 1.

    Add the flours, the LSA or psyllium husk and the sea salt mix on speed 3 for 15 seconds. 

    Add honey, oil and eggs and mix on speed 5 for 30 seconds or until combined. Then knead for 1 minute. 

    Mixture should be thick like a batter and a bit sticky. Use water to thin if needed. 

    Allow to rest  for 10 minutes. Place on a tray, you can use egg rings to shape. Allow to rise.

    Bake on 175°C for 20 - 25 minutes or until firm and golden.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
