Mini Caramelised Onion and Tomato Quiches
- 125 g Cheddar cheese, (~ 2cm cubes)
- 500 g Red onions, (approx 2 large onions, peeled, halved and sliced thinly)
- 35 g olive oil
- 25 g brown sugar
- 25 g balsamic vinegar
- 1 garlic clove, (Medium - peeled and crushed)
- 10 g olive oil
- 4 Roma tomatoes, (medium)
- 3 sheets puff pastry, ready-made, (thawed - 25cm x 25cm)
- 4 eggs, (min weight of 59g)
- 125 g cream, (35 -40% fat)
- pepper, ground, (to taste)

- Place cheese in bowl and "Blend" Speed 5 for 4 seconds until cheese is grated.
- Transfer grated cheese to a clean bowl and set aside.
- Add sliced onions, 35ml olive oil, brown sugar and balsamic vinegar to clean and dry bowl.
- Cook for 30 mins, 90°C, Speed 1 "Counter-clockwise operation" MC on.
- Remove lid and scrape down contents of the bowl.
- Cook 15 mins, Varoma temp (100°C), Speed 1 "Counter-clockwise operation" MC on.
- Transfer caramelised onions to a clean bowl and set aside.
Cool to room temperature.
Wash and dry TMX bowl. - Combine crushed garlic and 10ml olive oil in a small bowl and set aside.
- Generously grease two 12 hold non-stick muffin pans (⅓ cup capacity - yorkshire pudding tins).
Preheat oven to 210°C (190 °C fan forced) - Slice tomatoes into ~ ½ cm slices (you will need a total of 24 slices of tomato).
- In a clean and dry TMX bowl add:

Cream
Eggs
Season with salt and pepper to taste (optional) - "Blend" Speed 10 for 10 seconds until ingredients are well combined.
- Using a round cutter with a diameter of approx 8cm (I use one that is 78mm ( 3 1/16"), cut 24 rounds from the pastry sheets.
- Press pastry rounds into the muffin holes to cover the base and a little of the side of each hole.
(If you are making the quiches in 2 batches, keep half the pastry in the fridge whilst the first batch is cooking) - Place 1 tablespoon of the cheese, egg & cream mixture into each pastry lined muffin hole.
- Add caramelised onions to each muffin hole on top of the cheese, egg and cream mixture.
- Place a tomato round on each quiche.
- Spoon a small amount of garlic oil onto each tomato slice and then season with cracked pepper.
- Bake (210°C or 190°C Fan Forced) for ~22-24 minutes, until puffed and golden.
- Remove quiches from pan while hot.
If any have stuck to thepan, loosen with a fine bladed knife.
Servie quiches hot or at room temperature. - Store in an airtight container in the fridge.
Suitable to freeze.

I found that the pastry needed blind baking to live up to the wet ingredients, otherwise, it was an enjoyable tart.
