Ingredients
Gluten free dough
- 100 g basmati rice
- 120 g water
- 2 tbsp EVOO (extra virgin olive oil)
- 1 pinch salt
- 50 g soy bean, dried
- 50 g Seed Tapioca (sago)
- 1/2 tsp xanthan gum
Topping
- 220 g sour cream
- 200 g onion, sliced
- 100 g speck or bacon, lardons

Mill Basmati rice, soy beans and tapioca individually for 1min on speed 9.
Place all flours in bowl add xanthan gum mix for 15 sec on speed 4.
Add water, salt and oil and mix for 15sec on speed 5.
Roll out dough thinly between 2 oiled sheets of baking paper. Place on greased rectangular baking tray or alternatively on pizza stone, spread sour cream on to base and top onions and speck or bacon.
Bake in preheated oven at 220 till it looks crispy prox 15-25min
