Ingredients
- 2 tbsp olive oil
- 80 g lean bacon
- 1 garlic clove, crushed
- 200 g Butternut pumpkin (chopped, fresh, peeled)
- 300 g self-raising flour
- 1/2 tsp salt
- 35 g parmesan, cubed
- 80 g Fetta Cheese, crumbled
- 1 egg, lightly beaten
- 250 g buttermilk

Mill parmesan for 10 seconds on speed 10. Remove and set aside.
Mince bacon for 8-15 seconds on speed 6. Remove and set aside.
Cube pumpkin and place in TM bowl and grate for 15 seconds on speed 7.
Saute bacon and 1 tablespoon olive oil on "Counter-clockwise operation"
Varoma temperature for 4 minutes, speed 1.
Add pumpkin and garlic and sauté on "Counter-clockwise operation"
Varoma temperature for 5 minutes.
Remove from TM bowl and set aside to cool.
Sift flour and salt into TM bowl.
Stir in parmesan and three quarters of fetta.
Whisk together egg, buttermilk and remaining oil
in a separate bowl until combined.
Season with salt and pepper.
Add buttermilk mixture to TM bowl and mix for 30 seconds on "Counter-clockwise operation" , speed 3.
Add pumpkin mixture to TM bowl and mix for 10 seconds "Counter-clockwise operation" , speed 1
using the spatula to incorporate.
Spoon mixture into prepared cases. Scatter remaining fetta over tops of muffins.
Bake for 20-25 minutes, until skewer inserted comes out clean.
Stand in pan for 5 minutes, then turn out onto a wire rack.
Serve warm or at room temperature.
Tip
Original recipe used Jap pumpkin.

Very nice muffins. I didn’t have any buttermilk so I just used normal milk, recipe still turned out great
Oh yay! BBC aust good food was my fav mag when it was out, I made these a few times before thermo. Was looking for something to do with excess pumpkin and was hoping there was something like this out there! Thank you!
These were amazing and were gobbled up very quickly. Will need to doublt the recipe next time as the 12 muffins disappeared so quick, none made their way to the freezer.

Yummy, thanks for posting. I also added a couple of spring onions and sautéed them off at the same time as the bacon.
Made these muffins tonight. Delicious! I used tasty cheese instead of parmesan and worked really well.
Only baked for 15 minutes at 180C and muffins were done.
