Ingredients

Topping

  • 8-12 sundried tomatoes
  • 50 g parmesan, cubed
  • 1 tbsp dried oregano
  • cracked pepper, to taste
  • oil spray of choice

Dough

  • 150 g cheddar cheese, cubed
  • 300 g spelt flour
  • 100 g olive oil
  • 100 g water

Recipe's preparation

    Topping
  1. Preheat oven to 160 deg. (fan-forced).  Line small baking tray with baking paper and scatter tomatoes over.  Bake in oven approx. 20 mins.  Watch closely that they don't burn, the aim is to dry them out for milling.

  4. Meanwhile, add cheddar cheese to TM bowl and grate 10 secs / sp 9.  Add flour and olive oil and mix 20 secs / sp 6.  Add water and mix 20 secs / sp 6.

  5. Knead dough for 1 minute 30 secs.  


    Place a sheet of baking paper on top of your Thermomat and place half of the dough on top.  Roll as thin as you can without tearing dough, then place on a rectangular oven tray.  Repeat with remaining dough.  

  6. Back to the Topping.....
  7. Remove tomatoes from oven and increase temp. to 180 deg. celcius (fan-forced).


    After tomatoes have cooled for about 5 mins, add to TM bowl (no need to wash after dough) and mill for 20 secs / sp 9.  Add parmesan, oregano and pepper and grate for 10 secs / sp 9.  Sprinkle topping evenly over dough, then spray lightly with oil and place into oven for approx. 20 mins or until lightly coloured.  

  8. Remove from oven and while warm, use a pizza cutter to score 'shapes' into the cooked dough.  Leave to cool, then break apart gently.  

Tip

To further crisp these shapes, you could turn your oven off and pop the biscuits back in with the door ajar/open after you have scored them.

 

You could also play with different flavour combinations by changing your spice blend....mexican, asian, etc.
