Wow Are They Really Vegan Sausage Rolls
- 1 brown onion, cut into halves
- 1 tsp dried oregano
- 100 g walnuts
- 90 g rolled oats
- 3 tbsp chia seeds
- 150 g Roasted Chestnuts
- 1 tbsp soy sauce
- 50 g breadcrumbs
- 3 sheets ready-made puff pastry, slightly thawed
- plain flour, for dusting
- 7 tbsp water, plus, extra for brushing
- sesame seeds, for sprinkling

- Preheat oven to 200°C. Line a baking tray with baking paper and set aside. Mix 3 tbsp chia seeds with 7 tbsp water and set aside. Place brown onion into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula. Add dried oregano, walnuts and rolled oats and chop 3 sec/speed 6. Scrape down sides of mixing bowl with spatula. Add chia seeds mixture, chestnuts, soy sauce and breadcrumbs and combine 20 sec/speed 5. Cut puff pastry sheets into halves and transfer to silicone bread mat or floured work surface. Place ⅙ of the mixture onto the long edge of 1 pastry sheet half and roll. Cut into four equal portions and place onto prepared baking tray. Brush pastry with water and sprinkle with sesame seeds (optional). Repeat process with remaining mix and pastry sheet halves until all used. Bake for 20 minutes (200°C) until crisp and golden. Allow to cool slightly before serving warm.
Tip
I use Galil brand roasted chestnuts which csn be purchased from Costco or online. Alternatively, tinned chestnuts can be used.
