Ingredients

- 1000 grams mixed dried fruit
- sherry or port
- 250 grams Butter
- 250 grams brown sugar
- 4 eggs
- 150 grams plain flour
- 150 grams Self Raising Flour
- 1/2 tablespoon mixed spice
- 1 teaspoon Nutmeg
- 60 grams slivered almonds
- lemon essence

Soak the mixed dried fruit in a generous amount of sherry or port, overnight or for a few days in an airtight container.
Pre heat oven 150 degrees.
Place brown sugar & cubed butter in TM bowl, speed 8, 5 seconds. Insert butterfly, 2 mins, speed 3-4.
Add 4 eggs, 30 seconds, speed 3-4. Remove butterfly.
Add plain flour, self raising flour, mixed spice & nutmeg. 20 seconds speed 4.
Pour mixture into a bowl containing the soaked fruit. Add the almonds & a little lemon essence & fold through.
Spoon mixture into muffin/cupcake cases.
Bake 150deg 40-60 mins or until a skewer comes out clean.
Makes 20-30 depending on the size of the cases used.
Mini Christmas Cakes
Tip
Instead of making mini cakes, this mixture will also make one 8 inch cake.
Cook for 2 hour @ 150 degrees, then reduce to 120 degrees until cooked (when a skewer comes out clean)

Thanks for a great recipe. Made them a couple of times. Always delicious. I use gluten free flour, works great.
Added only 220 gms of sugar . Also orange peel. Decorate with silvered almond and half cherry. Cup cske paper and baking paper cut square 6"

Thermonats: i used apple juice instead of alcohol. Will they still keep in a container or do I need to freeze leftover ones? 😊

I made this last week as 1 big cake and it was beautiful! Plenty of fruit and very moist. Our visitors loved it!
Great little cakes. I made them dairy free with nuttelex and soaked fruit in brandy. It made 6 wonderful little 2 person sized Christmas cakes which I baked in lined ceramic ramekins. These will now be a yearly Christmas tradition. Thanks
