Ingredients

Bec’s Table Lemon Drizzle loaf

  • 300 g plain flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt, I use flaked pinch if using fine
  • 260 g caster sugar
  • 10 g grated lemon zest
  • 225 g unsalted butter, chilled, cut into small even cubes
  • 3 --- eggs, I use extra large
  • 190 g Milk, full cream
  • 100 g icing sugar
  • 60 g freshly squeezed lemon juice

Recipe's preparation

  1. Prep Work: Read through the recipe and the tips I've shared first. Preheat your oven to 170°C (fan) and line a loaf pan with baking paper. See the tips for the size of the pan. (Unless of course, if you have a good non-stick pan, you won't have to line it.)
  2. Weigh 300g plain (all-purpose) flour 8g (1/2 tsp) baking powder ¼ tsp flaked sea salt or ⅛ tsp fine sea salt to the TM bowl.
  3. MC in Mix for 3 sec/speed 6. Remove the contents and set them aside for later.
  4. Without cleaning the bowl, add 260g caster sugar 10g grated lemon rind (*see tips)
    Now set your TM for 5 sec/speed 8, scrape down, and repeat so the rind is grated fine.
  5. Weigh 225g of butter (cold small cubes).
    Mix for 30 sec/speed 6. Scrape down the sides and lift any mixture that may be stuck to the bottom of the blades.
  6. Insert the butterfly whisk. Crack eggs in a separate small bowl. Then add 1 egg, and 2 tbsp flour mix to the TM bowl and then set the blades to run 15 sec/speed 4 While the blades are running add the remaining eggs one at a time. Don't worry if it's not fully mixed when it stops running.
  7. Scrape down and read the next step before continuing. Weigh 190g milk into a small jug or bowl and have the remainder of the flour mix ready.
  8. Next, we'll be adding the flour mix and milk alternately, with the blades running. We'll be adding half the flour half the milk, half the flour then half the milk. Do this by setting the Thermomix for 25 sec/speed 3.5, and add your additions through the hole in the lid.
  9. Pour the batter into the prepared tin. Bake on the middle shelf. Start checking at 40 minutes and rotate if necessary; it's done when a skewer comes out clean or it reaches 98°C internally. Mine took an hour in our benchtop oven. Leave to cool in the pan on a cooling rack.
  10. For the Lemon Syrup
  11. Clean the TM bowl or use your second bowl. Weigh in 100g icing sugar 60g fresh lemon juice
  12. Heat for 2 min/60°C/speed 2
  13. Finish: Poke holes in the warm loaf and pour over the lemon syrup.

Tip

Lemon Rind: Make sure there is no pith on the lemon rind. The white bit is bitter. I have a video on how to do this if you want to see it on my YouTube channel.
Do not over-mix this batter or your cake will not be as light as it should be
Grating Lemon Rind: Ensure the rind is finely grated for even distribution in the cake.
Baking: Oven temperatures can vary, so adjust baking time as needed.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
