Ingredients

Donut ice-cream

  • 125 grams brown sugar
  • 160 grams full cream milk
  • 470 grams cream
  • 7 egg yolks, (=130g)
  • 60 grams glucose syrup
  • 2 1/2 teaspoons cinnamon sugar
  • 1/2 teaspoons Nutmeg
  • 1 teaspoons Vanilla Bean Paste
  • pinches salt

Donut cookie dough

  • 40 grams brown sugar
  • 40 grams white sugar
  • 1/4 teaspoons vanilla sugar
  • 40 grams Butter
  • 2 teaspoons cinnamon sugar
  • 1/4 teaspoons Nutmeg
  • 35 grams Milk
  • 105 grams plain flour
  • pinches salt

Recipe's preparation

    Donut ice-cream
  1. Add into the mixing bowl brown sugar, cream, egg yolks, glucose, vanilla and salt, lid and MC on, mix 20 sec/sp4

    Scape down the sides, lid and MC on, 5mins/80°/sp3

    Pour the hot liquid through a strainer and into a second clean TM bowl, or into a sepatate bowl discarding any lumps that's collected. Wash and dry mixing if not using a second TM bowl.

    Add Milk, cinnamon and nutmeg, lid and MC on, mix 20sec/sp3

    Freeze ice cream into a shallow container ( the ice cream should be only about 2 cm high, this will help for the next step)
    freeze for 6 to 8 hours

    Wash and dry mixing bowl

    Donut cookie dough

    Add to mixing bowl brown sugar, white sugar, vanilla sugar, butter, cinnamon, nutmeg and salt, lid and MC on mix 30sec/sp4
    Scrape down the sides, lid and MC on mix 1min/sp3

    Add milk and flour, lid and MC on, mix 30sec/sp4
    Scrape down sides and repeat 30sec/sp4

    Wrap dough in baking paper forming a log, freeze until needed

    Churning your ice cream

    Cut your donut ice cream into 1-2cm pieces and add into the TM bowl, churn for 1 min/sp6 MC on
    Scape side and repeat 1 min/sp6
    repeat if needed, making sure all of the ice cream has been completely churned (blended)

    Cut up the frozen cookie dough into pea size piece
    pop in half of the cookie dough into the TM bowl and with the aid of the spatula hand mix through the ice cream mixture, and then add the other half and hand mix again.

    Pour into an ice cream tub and freeze for a minimum of 4 hours.

    Wow, if you like cinnamon donut you'll enjoy this ice cream! The dough pieces made it fun! Love it and well make again.

    tip- I had to blend the ice cream three times at the end. My fault, I cut the piece too big, the recipe did state 1cm.
