Ingredients
Hedgehog
- 250 gram packet shredded wheat biscuits
- 180 grams Butter
- 120 grams caster sugar
- 30 grams cocoa
- 10 grams desicated coconut
- 1 egg, lightly beaten
Icing
- 230 grams icing sugar
- 3 tablespoons water
- 2 teaspoons cocoa
- hundreds & thousands

Line a 28x18cm slab pan with baking paper.
Crush biscuits for 3 seconds/speed 4.
Break up big bits left by hand. Set biscuits aside.
Add butter, sugar and cocoa to TM bowl.
Melt 40 seconds/50°C/speed 4.
Add coconut, egg and biscuits then mix 10 seconds/ reverse/ speed 4.
Press mixture into slab pan.
Chill for 1 hour in the fridge.
Place icing sugar, cocoa and water into mixing bowl and blitz 20 seconds/speed 4.
Scrape down the sides.
Then mix for 10 seconds/speed 4, repeat this until desired consistency is reached. Add more icing sugar if it is too runny.
Sprinkle with hundreds & thousands then place back in the fridge to set.

Hubby and I liked this but my kids didn't think it was sweet enough.
I don't usually make icing, so I wasn't sure what the 'desired consitancy' should be. But it didn't set using the amounts listed above.
