Ingredients

Biscuit Base

  • 200 g Light Digestive Biscuits
  • 100 g melted butter

Filling

  • 3 teaspoons Gelatine powder
  • 2 tablespoons Boiling water
  • 250 g Lite Cream Cheese
  • 100 g Lite Cream
  • 100g Vanilla Yogurt
  • 75 g raw sugar

Topping

  • 200 g Fruit - berries, cherries etc

Recipe's preparation

    Biscuit Base
  1. Blitz the digestive biscuits in the TM - 10 secs speed 9.

    Add in the melted butter and stir on speed 4 to combine.

    Spread over the base on the flan tin, flatten and put in the fridge to set.

  2. Filling
  3. In a small bowl, mix together the gelatine and the boiling water.

    In the TM - mill the sugar to icing sugar, add the gelatine mix, the yogurt and the cream.  Mix on speed for for 8 secs to combine,  raise the speed to 8 for 10 secs to make a very smooth filling.

    Spread over the base and put back into the fridge

  4. Topping
  5. Sprinkle fruit over the Fruit topping .... enjoy !!!

Tip

- Cheese cake is a high fat dessert, my daughter loves it so I have tried to reduce some of the fat content

- i have used cherries here, also great with Strawberries, raspberries etc

- Make a Fruit 'sauce' - add the fruit to a small pan, add 30g sugar and 1 tbsp cornfour mixed in 30g cold water and simmer down ...
