Ingredients
Lemon curd ice-cream
- 60 grams unsalted butter
- 1 or 2 grated lemon zest
- 6 egg yolk, (about 120g)
- 100 grams sugar
- 100 grams sugar, in a separate bowl
- 30 grams glucose syrup
- 140 grams lemon juice
- pinch salt
- 400 grams pure cream
- 130 grams full cream milk

- Add into the mixing bowl butter, yolk, zest, glucose, lemon juice, salt and only 100g of sugar mix 20sec/sp4 mc on
Scrape down the sides, lid and mc on 5mins/80º/ps3
Pour the hot liquid through a strainer and into a 2nd clean TM bowl, or into a sepatate bowl discarding any lumps that's collected. Wash and dry mixing bowl if not using a second TM bowl
Add hot liquid and 100g sugar into TM bowl and mix 20sec/sp2 mc on, scrape down the sides and mix 1min/sp2
Add cream and milk mix 20sec/sp4
Freeze lemon curd into a shallow container (the lemon curd should be only about 2cm high, this will help for the next step)
freeze for 6 to 8 hours
Churning your ice cream
Cut your lemon curd into 2-3cm pieces and add into the TM bowl,
churn for 1min/sp6 mc on (well, I do peek though the hole, it's very exciting)
Repeat if needed, making sure all of the ice cream has been completely churned (blended)
Pour ice cream into a ice cream tub and freeze for minimum of 4 hours.
This ice cream is perfect on waffles, pancakes or just straight out of the tub!
***NOTE: If you found it too lemony, reduce the zest by half and only add 100g of lemon juice.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
