Oven-baked Fish with Coriander Seed Crumble
- 1 cup breadcrumbs
- 1/4 cup pistachios
- 1/4 cup parsley
- 1 tablespoon lemon juice
- 2 tsp coriander seeds
- 4 x 150 g White Fish Fillets
- 400 g potatoes
- 1/2 cup --- skim milk
- 80 g Baby Spinach Leaves
- 2 tsp Dijon mustard

- 1. Preheat oven to 180degC or 160degC fan-forced. Line a baking tray with baking paper.
2. Put breadcrumbs, pistachios, parsley & coriander seeds in mixing bowl. Turbo for 2-3 seconds.
3. Add lemon juice & mustard and combine - 10sec/Reverse speed 1.
4. Place fish on prepared tray and top with breadcrumb mixture. Bake for 15mins until golden & cooked through.
5. Wipe out bowl and prepare mashed potatoes according to TM Basic Cookbook recipe.
6. Remove butterfly whisk & add spinach leaves. Combine for 1-2 mins on reverse speed 1. Season with salt & pepper.
7. Serve potatoes topped with fish & lemon wedges.
