Vegetables in saffron, chilli & coconut broth
- 1 tbsp canola or sunflower oil
- 1 brown onion
- 1 garlic clove
- 1 cm ginger
- 1 red chilli
- 1/2 tsp Ground Coriander
- 1 pinches saffron threads
- 250 g light coconut milk
- 2 tsp fish sauce
- 500 g butternut pumkin, cut into 2cm cubes
- 400 g potatoes, cut into 2cm cubes
- 1 red capsicum, cut into 2cm pieces
- 200 g green beans, cut into 2cm pieces
- 125 g fresh coriander leaves

- 1. Chop onion, garlic, ginger & chilli 3sec/speed 5.
2. Add oil, ground coriander & saffron - saute 4sec/100deg/speed 1.
3. Add coconut mik, fish sauce - heat 30sec/100deg/speed 1.
4. Add pumpkin & potato - cook 8min/100deg/reverse speed 1.
5. Add capsicum & beans - cook 5min/100deg/reverse speed 1.
6. Add coriander leaves & serve.
