Ingredients
Basque Chicken
- 250 grams Green peppers, Quarter the peppers, removing seeds & stalks.
- 250 grams red peppers, Quarter the peppers, removing seeds & stalks.
- 250 grams tomatoes, ripe, Cut the tomatoes in quarters
- 3 cloves garlic
- 200 grams onions, brown, cut in two [approx 2 onions]
- 600 grams chicken drumsticks or thighs, skin on, or other chicken pieces [4 to 6]
- 1 level teaspoon coarse salt
- 2 level teaspoon sweet paprika
- 2 bayleaves
- 2 level teaspoon thyme, dried, or herbes de Provence (savory, bay leaf, sage, sage, fennel, parsley, thyme, tarragon)
- 10 grams olive oil, extra virgin
- 200 grams white wine, dry, dry
- 200 grams rice, boiled or steamed, for serving
- 1 level teaspoon cracked black pepper

Wash & prepare the vegetables.
Put the oil & onions in the TM bowl & mix 4 seconds/speed 6.
Scrape down the sides of the bowl and cook 2 minutes/100C/speed 2.
Add the peppers to TM bowl. Place the tomatoes in the simmering basket & place in the TM Bowl. Cook 5 minutes/100C/speed 2-3. Remove stimmering basket, peel the tomatoes and set aside.
Mix the herbs & spices except the bay leaves. Place the chicken pieces in a plastic bag with half the herbs & spices, and shake till coated. If you like your chicken browned, you can now brown the chicken in a frypan with olive oil. If so, when you
Add the chicken, wine, tomatoes, and the remaining herbs & spices. Cook 30 minutes at 100C/"Counter-clockwise operation" /speed "Gentle stir setting" .
Check & adjust the seasoning to taste.
Place the chicken and vegetables on a serving plate. pour over one ladle of juice and place the remaining juice in a serving jug. Serve hot with rice, potatoes or toast, and a decorative bay leaf on the side.
