Ingredients

  • 4 sprig rosemary leaves only
  • 2 cloves garlic
  • 200 g brown onion peeled halved
  • 40 g olive oil
  • 250 g Bacon diced
  • 1200 g beef cheeks trimmed well and quartered
  • 200 g red wine
  • 20 g plain flour
  • 50 g beef stock paste
  • 20 g apple cider vinegar
  • 50 g Worcestershire sauce
  • salt and pepper to taste

Recipe's preparation

  1. Place garlic and rosemary in the bowl and blitz on Speed 8 for 10 seconds.  Scrape down the sides.

  2. Add the onions and chop on Speed 5 for 3 seconds.  Scrape down the sides.

  3. Add oil and bacon and sauté for 10 minutes at 120°/Varoma Reverse speed 1.

  4. Add remaining ingredients and cook for 60 minutes at 100° Reverse Speed 2.

  5. Check for seasoning.  Cook for another 20 minutes at Varoma Speed 1. Without the MC in place and the basket on top.

  6. Place into your Thermoserver to rest.  Clean your bowl and make a batch of Thermomix mash potato.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Dinner guests were blown away with the combination of flavors. Thoroughly recommend this one. Served with mash potato and the alternative side was parmesan polenta with roasted mushrooms, garlic and thyme on top. Beef cheeks were melt in your mouth after they cooked. Garnished with roasted thyme leaves made them look a little more restauranty - but it is hard to dress up beef cheeks on mash so don't be disheartened when you plate up. Enjoy the flavors. Smile

    Very tasty! I put too much flour (as forgot halving the recipe!) so was abit thick. Also the last Varoma cook resulted in abit of sticking at bottom of bowl (next time I will try leaving it at 100deg for longer, instead of Varoma temp). But it was yum and keeepomg in my favourites!

    I’m not a meat eater, but hubby requested this dish. It’s currently cooking and it smells amazing. Halved the recipe as we only had 600 gms beef cheeks.

    This was absolutely delicious. I used veg stock paste and served with cauliflower mash. I made a GF and low FODMAP version using GF flour and Worcestershire sauce, and fennel instead of onion plus onion and garlic infused oils. I will certainly make it again soon. Thanks for posting the recipe.

    This was amazing loved every minute of it however I cooked mine for a dither 35 minutes after the 60 minutes to ensure they were cooked enough and they were great recipe Smile

    This was so easy to follow and incredibly tasty!! Very enjoyable and definitely one to save to my collection. I read through the comments and decided to increase cooking time and let rest in thermoserver. Buon Appetito!!

    Very very nice just cooked it for an extra 15 min and let it sit for a further 20 while I cooked potatoes  it melted in your mouth with awesome flavor

    Chewy... Sorry!

    Great flavours but cooking time needs to be longer/slower. And caused my thermo to throw a c160 fault for the first time  tmrc_emoticons.~
