Ingredients

  • 150 g Brown onion peeled and halved
  • 20 g fresh ginger
  • 2 cloves garlic
  • 2-3 chillies (to taste)
  • 1 tsp tumeric
  • 1 tbsp Ground Coriander
  • t tsp ground cumin
  • 1 tsp garam masala
  • 40 g oil
  • 400 g tin tomatoes
  • 800 g water
  • 500 g long rice
  • 1 tsp salt
  • 2 bay leaves
  • 1 cinnamon stick
  • 3 black cardamom pods
  • 2 whole cloves
  • fresh coriander, garnish
  • Roasted Cashews, garnish
  • black cumin seeds, garnish

Recipe's preparation

  1. Add onion, garlic, ginger and chillies to the bowl and chop on Speed 6 for 2 seconds.  Add oil, turmeric, coriander, cumin and garam masala and cook for 5 minutes at Varoma Reverse Speed 1.

  2. Meanwhile, put a bit of oil in a pan and heat up the cloves, cinnamon, cardamom and bay leaves until just fragrant.  Turn heat off.

  3. Set your TM5 to Automated Cooking for Boiled Rice.  When asked to add water add 800g (NOT 1000g) and a tin of tomatoes.  Follow the instructions of your machine to add the salt and rice.  Add bay leaves, cardamom, cinnamon and cloves after you have added the rice.  Then turn the dial to cook on auto mode.  I put a simmering basket on top to avoid splatter.

  4. Place into a Thermoserver or platter as soon as it is ready and top with cashews, coriander and cumin seeds. 

    Serve with my Indian Chicken.

    The flavours in this rice are amazing. However I've cooked this twice now following the recipe and steps without altering anything and have ended up with the same result. The rice turns to mush and becomes rock hard however is eatable once there is curry/curry sauce placed on top.

    Added lamb pieces at the initial cooking stage and also adjusted my Basmati to 400grams (knowing Basmati absorbs a lot of liquid). It turned out PERFECT and delicious!! it was a crowd pleaser. Thank you for this awesome recipe!

    Yeah I think the instructions seem pretty clear to put the rice in the mixing bowl with everything else and the simmering basket on top so it doesn't splatter.

    I think I did something wrong here.

    I put the rice in the simmering basket for cooking and my doibts that it would not cook through proved to be correct. I transferred the whole amount into a rice cooker to finish the cooking.

    500g of uncooked rice in the simmering basket is far too much. Did you mean for people to add the rice to the mixing bowl?

    After you have chopped and sautéed the garlic, ginger chill is etc, do you add them to the rice? Or leave them in the bowl with the water and tomatoes?

    If i wanted to add more vegies to the dish eg frozen peas, frozen carrots, brocoli, sliced potato, when should I add them? Has anyone tried  adding more vegetables? thanks! dilushani
