Ingredients
Beef marinade
- 1000 g Beef strips
- 2 --- Limes, flesh only
- 65 g Pineapple, fresh, or juice
- 40 g Worcestershire sauce
- 60 g extra virgin olive oil
- 4 clove garlic
- 2 tsp ground cumin
- 2 tsp chilli powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1/3 bunch coriander
- 1 small red chilli, optional
Vegetables
- 2 Capsicum, sliced
- 1 onion, sliced
- 20 g extra virgin olive oil
Guacamole
- 1 clove garlic
- 1 jalapeño chilli
- 1/2 red onion
- 1/3 bunch coriander, leaves only
- 2 haas avocados, flesh removed
- 1/2 tsp ground cumin
- 1/2 tsp chilli powder, to taste
- 1 tomato, finely diced
- 1/4 tsp salt
- 1 lime, juice only
Sides
- sour cream
- cheese, grated
- Lettuce, shredded
- 1 can canned black beans
- 12 tortillas

- Place all marinade ingredients (apart from the beef strips) into Thermomix bowl and blend 10 seconds/Speed 8.
- Scrape down sides of bowl and then combine beef 10 seconds/"Counter-clockwise operation" /Speed 2.
Set aside in a bowl to marinate for at least 2 hours.
Clean and dry mixing bowl. - Slice capscicum and onion and set aside in a bowl.
- Place garlic and chilli into the bowl and chop 5 seconds/Speed 7.
- Add red onion and coriander and chop 3 seconds/Speed 5.
- Add avocado flesh, spices, salt, diced tomato and lime juice to bowl and combine 5 seconds/"Counter-clockwise operation" /Speed 3. Check consistency and repeat if necessary.
Set aside in a bowl. - Shred lettuce, grate cheese, drain beans and prepare tortillas ready for serving.
- Heat a large heavy pan and fry off onions and capscicum in olive oil. Set aside in a ThermoServer to keep warm.
Fry off the beef in batches and add to ThermoServer to keep warm.
Serve beef and vegetables with guacamole, sour cream, cheese, lettuce, black beans and tortillas.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
