Ingredients

Dukkah Chicken and Quinoa

  • 400 grams chicken breast diced, 1cm cubes
  • 300 grams sweet potato / pumpkin, 1cm cubes
  • 2-3 heaped tablespoons dukkah recipe, Recipe EDC
  • 200 grams broccoli florets, small
  • 200 grams feta
  • 1 can Diced Tomatoes (400g)
  • 1 can water
  • 1 tablespoon vegetable stock concentrate
  • 300 grams quinoa (rinsed well), I used red but white is fine too
  • 100 grams baby spinach, fresh
  • 1 can chickpeas, rinsed and drained
  • 4 Spring onions chopped
  • 100 grams Pitted black olives, optional

Recipe's preparation

  1. Add Water Tomatoes and Veggie Stock to TM bowl.


    Add Rinsed Quinoa to Rice Basket and place in Bowl with Tomato Sauce.


    To Varoma Dish Add Sweet potato then Chicken (sprinkle liberally with Dukkah) and Broccoli.


    Cook FOR 20 -25 MINUTES on VAROMA TEMP  Speed 4, (stirring everything well after 18 minutes, including Quinoa).


    When everything is cooked through well, Place in LARGE serving bowl. Add Chickpeas, spinach, olives, spring onions and some of the left over sauce from TM bowl. (to taste)


    Stir gently all ingredients together then add crumbled Fetta on top to serve.

    Delicious nourishing combination!

    I love all the elements of this dish and how they taste together. I always feel so satieted after eating this meal. Love it!

    Yummy! I hadn't used my varoma before now and it was so easy. I did it without the chicken as my husband is vegiterian.... Did instead with a side of lamb cutlets and was delicious, will definitely make again.

    The spring onion and spinach are added after and mixed in with the chicken and Quinoa. The heat from the other ingredients is enough to soften the spinach.

    Hi, a friend recommended this recipe to me. Just reading through it and I'm not sure at what stage you would add the spring onions to the mix as it doesn't appear to be mentioned in the method? Also, would you add the spinach to the varoma in the last 5 minutes? It doesn't appear to mention actually cooking/steaming it, just adding it raw to the serving bowl. Thanks tmrc_emoticons.-)

    If you dont wish the chicken juice to run down into the rest of the ingredients, just wet some baking paper and place on the varoma tray, ensuring you leave some room for the steam to get through and cook like that. It does depend on the size you cut your sweet potato, try cutting a little smaller. tmrc_emoticons.)

    Was nice recipe, but I don't like the way the chicken juices dripped onto the quinoa. How do you get around this?

    My sweet potato also took alot longer to cook.

    very tasty and easy recipe to follow, had heaps of left overs which were delicious cold the next day, thanks for sharing.
