Ingredients
- 40 g cashew nuts
- 120 g massaman curry paste
- 270 g light coconut milk
- 1 tablespoon chicken stock paste
- 3-4 small chat potatoes, peeled and cut in half
- 600 g pumpkin, seeded, peeled and cut into 2cm dice
- 600 g chicken breast fillet, cut into 3 cm dice
- 2 Kaffir lime leaves
- 2 teaspoon palm or brown sugar
- 1 tablespoon fish sauce
- 1/2 lime, juice only
- coriander and basil leaves to garnish
- fresh coconut, lime wedges, cucumber strips and sliced chilli to garnish (optional)
Massaman curry paste
- 2 onions, halved
- 2 cloves garlic
- 50 g coconut oil
- 1 teaspoon shrimp paste
- 6 long red chillies, deseeded and roughly chopped
- 1 Lemongrass stalk, white only, roughly chopped
- 3 cm piece ginger, peeled and roughly chopped
- 2 tablespoon Ground Coriander
- 2 teaspoon ground cumin
- 1 teaspoon fennel seeds
- 1 teaspoon cinnamon

For the Massaman curry paste
1. Place the onion and garlic in the mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl. Add coconut oil and saute 3 min/120C/speed 1.
2. Add shrimp paste and cook 1 min/120C/speed 1. Add remaining paste ingredients and chop 10 sec/speed 9. Scrape down sides of mixing bowl. Repeat process as needed to achieve a paste consistency. Store paste in a clean, dry jar in the fridge for up to 3 months. Clean and dry mixing bowl.
3. Place cashews in mixing bowl and chop 2 sec/speed 4, then roast 5 min/Varoma/speed 1. Remove from bowl and set aside.
4. Place 120g Massaman curry paste and 60g coconut milk into mixing bowl and cook 2 min/Varoma/speed 1.
5. Add remaining coconut milk and chicken stock paste. Place potatoes in Varoma basket and into position. Place diced pumpkin in Varoma tray and into position. Cook 25 min/Varoma/reverse/speed 0.5.
6. Remove cooked potatoes and set aside in medium bowl or Thermoserver. Remove half the diced pumpkin and add it to the mixing bowl. Blend 30 sec/speed 5. Add the remaining cooked diced pumpkin to the potatoes.
7. Add diced chicken, green beans, Kaffir lime leaves to the mixing bowl and cook 8-10 min/100C/reverse/speed 0.5.
8. Add brown sugar or palm sugar and fish sauce and cook 2 min/Varoma/reverse/speed 0.5. Add lime juice just before cooking time ends. Taste and adjust seasonings if necessary.
9. Place potatoes and diced pumpkin in serving bowls. Add chicken and sauce to the serving bowls. Serve with chopped cashew nuts, herbs and other garnishes.
Method
Tip
Try this dish with firm white fish fillets, prawns or tofu. Reduce cooking time where necessary.

Wow!! Imas this tonight but used red lentils and mushrooms instead of the chicken and it was super tasty. Had friends around for dinner and it was enjoyed by all!!!

I followed the instructions to 100%, but it didn't turn out nice I'm afraid.
It was far too much liquid, I ended up with a big bowl of flavoured water and chicken pieces in it.
Still 2 stars, because the Massaman paste looked good.
