Ingredients

  • 2 clove garlic
  • 1 red onion
  • 1 Red Chilli (optional)
  • 20 g oil
  • 500 g chicken breast diced
  • 2 tablespoon Mexican Chilli Powder (medium)
  • 1 tablespoon Dried oregano (or fresh)
  • 1 tsp Ground Coriander
  • 1 Red Capscium chopped
  • 180 g rice
  • 400 g Tin Tomatoes Diced
  • 300 g Salsa
  • 1 tablespoon TMX stock concentrate
  • 250 g water
  • 1 can kidney beans drained
  • fresh coriander

Recipe's preparation

  1. Chop Garlic and Onion (and chilli if using) for 2 seconds Sp 7. Add oil and sauté for 3 mins @ 100deg on Sp 1.

  2. Add Chicken, chilli, oregano, grd coriander, capsicum and rice. Cook for 5 minutes @ 100 deg on Soft Spoon Reverse.

  3. Add tomato, salsa, stock, water and cook for 15 minutes @ 100deg on Soft Speed Reverse.

  4. Add beans and coriander and cook for further 10 mins @ 100deg on Soft Speed Reverse with no MC in place.

Tip

Leaving the chilli out makes it a mild dish so kids won't complain.  You can enjoy this dish on its own or with wraps and salad.  I added sweet chilli sauce to spice my wrap up.

    Yummy!! I made this as per the instructions except I cooked it a couple minutes extra to make sure the rice would be cooked (not sure it was needed though). Everyone ate it (miraculous!). This will definitely be a regular in our house in the future!

    So yummy could not stop eating it , didn’t add the fresh chilli and halved the Mexican chilli and was just right for the whole family. Added beans in with all the other ingredients and used jasmine rice. So good 😊

    Loved it made it in my TM5 on reverse.

    We found this nice. We enjoyed it in mini stand up soft taco shells with cheese. The kids thought this was great. We found the rice didn't cook properly, and the kidney beans needed to be added in with the other ingrediants, otherwise they wouldn't cook either. Maybe next time I'd leave the rice and water out.

    Fantastic hubby and I loved it! I made a guacamole to put on top plus a dollop of sour cream and a sprinkle of cheese with corn chips on the side. I cut the Mexican chilli powder down to one tablespoon which for us was perfect heat. Thank you for the recipe 😊

    So good! Highly recommend. I omitted the Mexican spice until it was on my plate..added some sour cream and yummo!!!!
