Ingredients

Spice mix

  • 1/4 teaspoon cinnamon
  • 2 teaspoons garam masala (EDC)
  • 1/2 teaspoon tumeric ground
  • 1 teaspoon chilli powder, (or use fresh chilli to taste)
  • pinch Cardamon powder

Ingredients

  • 4 fillets chicken breast, (approx 600 -700 g)
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1-2 centimetre piece of ginger
  • 1 Onion (quartered)
  • 3 tablespoons Butter or Margarine
  • 50 grams Almonds (raw or meal)
  • 1 can tomatoes, or use fresh with 40g extra water
  • 60 grams water
  • 1 tablespoon tomato paste
  • 1 tablespoon natural yoghurt
  • 2 tablespoons cream
  • 1 tablespoon lime juice
  • 1 tablespoon stock paste (EDC), vegetable or chicken

To serve

  • coriander to taste
  • salt and pepper to taste
  • extra garam masala to taste

Recipe's preparation

  1. Prepare the spice mix by combining all spice mix ingredients in a small bowl and set aside.

    Dice chicken breast and season with salt and pepper and set aside.
  2. Place garlic, ginger and onion (and chilli if using fresh) in mixing bowl and chop for 3 sec/ speed 7. Scrape down sides of bowl.
  3. Add butter and oil and saute 3 mins/Varoma/speed 1
  4. Add almonds, tomatoes and water and then puree for 5secs/speed 8 (3 seconds if using almond meal)
  5. Add chicken, tomato paste, yoghurt, cream, lime juice, stock paste, & spice mix. Cook 16 mins/100 degrees/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" Pause just prior to end time and add coriander. Add more garam masala to taste.
  6. Serve over cooked rice.

Tip

Increase the amount of almonds if a thicker sauce is preferred.

    Hi there Immctagg,

    The reason that the spice mix is listed first is that I combine these in a small bowl when prepping the ingredients and it also shortens the ingredients list.  I didn't stop to think that this would be a source of frustration.... I think I will add an extra preparation step at the beginning to reflect this, so people dont forget any of these in the final mix.  Glad you are enjoying the recipe otherwise!

    Outstanding. Crowd favourite.  Butter chicken at its best.  Minimum of 600 gms of chicken, as the amount of sauce that is made needs to be used on the meat.  Can always have it as part of the left overs for lunch.  Probably best to use about 800 gms of meat for the amount of sauce (based on several successful attempts).

    Definitely a great butter chicken recipe.  Would recommend it to anyone.  Will be putting this on the winter recipe list.

    Having cooked it a number of times, it is getting frustrating not having the ingredients listed in the order in which they are added to the bowl.  While it is handy to have the Spice Mix at the top of the recipe, ideally they should be listed under the vegetable stock.  I have made notes on my printed version of the recipe to avoid missing the addition of these important ingredients.

    WOW!! THIS IS AWESOME!! my consultant recommended this recipe & being a huge indian fan thought i would give it a crack! i think the fact it was a winner with my 2yo was what made it all that much better!!Definitely putting this one in my favourites!!!! Big Smile Cooking 9

    The BEST Butter chicken recipe I have tried and the simplest to make.  I used my own Garam Marsala which I think is the real secret.
