Ingredients
Mince
- 1 onion, peeled and quartered
- 3-4 garlic cloves
- 20g oil
- 500g Beef mince
- 30 to 40g Mexican spice mix OR taco seasoning/powder, (I use Skinnymixers homemade version)
- 1 tablespoon meat stock concentrate, (I use homemade, but use any stock you prefer)
- 1 tablespoon tomato paste
- 1 can of chopped tomatoes (400g)
- 1 can of red kidney beans (400g), drained and rinsed

Place onion and garlic into TM bowl and chop 3 seconds, speed 7. Scrape down bowl.
Add oil to bowl and saute for 4 minutes, 100 degrees, speed 1, MC OFF.
Add mince to bowl, trying not to break it up too much as you put it in to keep the texture, and cook for 5 minutes, 100 degrees, reverse, spoon speed (slowest speed), MC OFF.
Add Mexican spice mix, stock, tomato paste, chopped tomatoes, kidney beans, salt and pepper to bowl and cook for 15 minutes, 100 degrees, reverse, spoon speed (slowest speed), MC ON.
Serve nacho sauce with corn chips and top with sour cream, grated cheese and avocado.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. My hsuband doesn't like nachos, but he liked it when I made this! Very tasty. Only thing is I wish the corn chips and avo were on the shopping list, as I almost forgot them!!
Yum and easy! For the seasoning I used 1tsp garlic powder, 1 tsp onion powder, 1 Tbsp paprika, 1 Tbsp Cumin, 1 Tbsp Oregano, 1 tsp salt. Everyone in our family loved it, thank you!

Delicious, we did add extra veggies, carrot and mushroom and chopped for a little longer before adding oil etc. First time around we put mince on top of chips but served separately next time as got too soggy. Served with guacamole. Will definitely have again.
My go to recipe. So easy and delicious! I've cooked it at least 20 times.
I add more spices (cumin, paprika, cayenne) and always add whatever veggies I have (zucchini, carrot, celery, mushroom, capsicum, etc.), chop them after the onion and sauté for another few mins before adding the meat.

Absolutely delicous! I used the Old El Paso nacho mix (30g) and didn't add salt or pepper. I didn't have any meat stock so used a teaspoon of Thermo vegetable stock. A little tweak needed for my taste of adding a bit more stock next time or some salt. Looking forward to trying the homemade skinny mixers spices as suggested next time. Huge thungs up from the whole family! Thankyou.
