Ingredients

pork

  • 60 g olive oil
  • 500 g pork neck, ask butcher to slice paper thin), cut into strips about 3 cm wide
  • 200 g onion, cut into wedges
  • 125 g cabbage, finely shredded

Sauce

  • 50 g soy sauce, use tamari to make it gluten free
  • 100 g mirin
  • 50 g sake
  • 30 g ginger, stem, or more if you like

Topping

  • kewpie mayonaise, recipe on cookidoo
  • shichimi, Japanese 7 spice
  • Rice (pre cooked), Use short grain or sushi rice
  • 2 spring onions, For garnishing

Recipe's preparation

    Preparation Sauce
  1. Pre-cook your rice
  2. Place Ginger into mixing bowl, place lid and MC on and chop, 3 sec/speed 7 Scrape down mixing bowl Place lid and MC on and chop 3 sec / speed 7 Scrape down mixing bowl open scales and add: 50g soy sauce 100g Mirin 50g Sake Mix 5 sec/ speed 3 Transfer to bowl and set aside Wash and dry mixing bowl
  3. Pork
  4. TM6: Saute onions using high heat recipe for Browned Onions (200g)[

    If using TM5 or TM31, chop onions speed 7, 3 secs, add 30g olive oil then cook on varoma for 3 mins, speed 1)

    Set onions aside in 500ml ThermoServer
    Add 15g oil
    Add 500g finely cut pork strips

    Cook 5 mins, varoma, reverse, speed 1
    Add 120g of the reserved onions
    Add reserved sauce

    Cook 2 mins, varoma, reverse, speed 1
  5. Assembly
  6. Place rice into bowls
    2. Place a thin layer of shredded cabbage on rice
    3. Place kewpie mayonnaise in zig zag pattern over cabbage

    4. Place ginger beef on top of cabbage
    5. Dust with Shichimi
    6. Top with Spring onions
