Ingredients

Tandoori Chicken Quinoa

  • 1000 g Chicken thigh fillets, cut into strips
  • 1 tablespoon Greek or natural yoghurt
  • 3 tablespoon Tandoori paste*, (can be purchased or see indian cookbook)
  • 3 clove garlic
  • 200 g quinoa, rinsed and drained
  • 1 Large Brown Onion, sliced
  • 250 g green beans, cut into large pieces
  • 1 Large carrot, sliced
  • 1 large zucchini, sliced
  • 1.2 l water
  • 1 handful of fresh coriander, roughly chopped
  • 1 red chilli, sliced for garnish

Recipe's preparation

  1. Place garlic in mixing bowl and chop for 3 seconds speed 7.

     

  2. Add tandoori paste, yoghurt and chicken and mix for 10 seconds Counter-clockwise operation"Counter-clockwise operation" speed 2 or until chicken is thoroughly covered with marinade.

  3. Set mixture aside to marinade for at least half an hour, longer if possible

  4. Place water into mixing bowl. Put rinsed and drained quinoa into simmering basket and set into place.

  5. Place vegetables into the varoma dish and chicken onto the varoma tray and set varoma into place. Cook for 20 minutes, Varoma temperature speed 2.

  6. Remove quinoa and place into thermoserver.

  7. Set Varoma back into place and cook for a further 15 mintues Varoma temperature speed 2.

     

  8. Place quinoa chicken and vegetables into a large mixing bowl and combine with coriander and chilli (if using). Serve

Tip

This is lovely served with some additional greek yoghurt on the side.

 

If you prefer a milder tandoori flavour, reduce the paste to 2 tablespoons.

    So yummy. Only thing I would do is cook veges only for 20 mins as I like them crunchy but this was a huge hit in my house.

    Great recipe. Super simple and tasty. Great for a mid week family meal. I didn't combine ingredients at the end, just topped quinoa with chicken and had veggies on the side. Combining everything probably would have tempered the spiciness which was a little too much for my 5yo but great for us.

    Very tasty and cheap! It makes so much!  And to top it off you cook everything together at once, so easy to make! This is a keeper!

    Very nice, first time cooking quinoa in the thermomix and it worked well. A great recipe for cooking chicken, vegetables and quinoa all at the same time. I only used 2 tablespoons of the paste as my children were eating the meal, but it was too mild for us. Will definitely try 3 tablespoons next time.  Big Smile
