Ingredients

Fritter batter

  • 600 grams cauliflower, ( 1 small or 1/2 large). Washed and broken into florets
  • 1 Onion, medium, Peeled and cut in half
  • 65 grams Cheddar cheese, Cubed for grating
  • 4 slices shortcut bacon, quartered
  • 1 egg
  • 1/2 teaspoon cumin
  • 60 grams plain flour
  • salt, to taste
  • pepper, to taste
  • 1 level teaspoon vegetable stock
  • Panko crumbs for rolling, Optional
  • olive oil, or ricebran oil for frying, shallow fry or deep fry
  • Sweet chilli or tomato sauc, for dipping

Recipe's preparation

    Prepare the fritter batter:
  1. Place cauliflower florets in Closed lid"Closed lid" .

    Blitz on sp 4, 20 seconds. You may need to use your spatula to help.

    Remove and set aside.

    Put onion and cheese and bacon in Closed lid"Closed lid" .

    Blitz speed 6, approximately 8-10 seconds, seconds chopped to your liking. Leave in your Closed lid"Closed lid" .

    Return cauliflower to bowl.

    Add egg, flour, spices, s&p and vegetable stock to Closed lid"Closed lid" .

    Blitz Counter-clockwise operation"Counter-clockwise operation" , speed 4 (using your spatula if required), until well combined. Scrape and repeat if necessary.

    Mixture will be soft, but if too runny to hold a shape add another tablespoon of flour and re-blitz.

    Heat frypan or deep fryer with oil. I like to use a non stick pan if pan frying...they do stick otherwise...your choice.

    Take tablespoons of mixture, roll into golf ball size balls and roll in Panko crumbs. 

    Fry in batches in hot oil, app 5 minutes.

    Drain on paper towel.

    Serve hot with a dollop of yoghurt, or sour cream, Sweet chilli or tomato sauce.

    Nice with a garden salad on the side..  tmrc_emoticons.;)

Tip

Make the most of produce in season...

Add carrots, potatoes, zucchini, whatever you have on hand.

    Kids enjoyed them age 8 and 6 and of course 3 just destroyed them, 3 needs a few goes with new food!

    I added almond meal and they were great!

    Delicious... And I'm only new to eating cauliflower. You'd never know it was cauliflower in it. Needed to add a little extra flour as suggested and we cooked in the oven instead of frying which turned out perfect. the hard part is trying to wait for them to cool down a little bit to eat them. Enjoyed with some aioli. Thanks for the great recipe.
