Ingredients

Coating

  • 1 cup Tapioca Flour
  • coconut oil for shallow frying

Kofta/Vegetarian Dumplings

  • 1 cup frozen peas
  • 2 carrots
  • 1 Large Sweet Potato, (peeled)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 red chilli
  • 2/3 Cashews
  • 2 tablespoon coconut cream or refrigerated coconut milk

Malai Kofta Curry

  • 20 g coconut oil or olive oil
  • 1/2 teaspoon cumin ground
  • 1 onion
  • 3 clove garlic
  • 1 inch ginger
  • 1 red chilli
  • 1/2 - 1 teaspoon sea salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground tumeric
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Ground Coriander
  • 1 tablespoon Chia, (soak in 3 tablespoons of water)
  • 1 can diced tomatoes
  • 250 g water
  • 1/2 cup coconut cream or coconut milk
  • 3 teaspoon cornflour

Recipe's preparation

    Kofta/Vegetarian Dumplings
  1. 1. Place cashews into bowl and chop on spd 5 for 3 secs. Repeat. Make sure you leave them slightly chunky and not over grind them. Set aside.

    2. Rinse bowl with water. Add 400g water to bowl. Slice the carrots and sweet potato in 1-2cm thick. Place carrots in varoma dish, and peas and sweet potato on the varoma tray. Steam for 25mins, varoma and spd 2.

    3. Drain the veggies once steamed and remove all excess water from them. Pat try if need be. Empty all water from bowl. Make sure its quite dry.

    4. Add chilli to bowl and chop for 3 secs on speed 7. Add steamed veggies to bowl and use turbo for 1 second 3 times. You don't want to over puree.

    5. Add all other ingredients to bowl. Mix for 10 secs on spd 4.

    6. Roll mixture into balls and coat with tapioca flour.

    7. Shallow fry in oil until golden and place on paper towel to remove excess oil once done.

    8. Place in thermoserver to keep warm.

  3. 1. Place chia seeds into a separate bowl with water and set aside.

    2. Add onion, garlic, ginger and chilli to bowl. Chop for 3 secs on spd 7.

    3. Add oil and all spices to bowl. Saute 5 mins, 100C on spd 1.5.

    4. Let the mixture cool for 10 mins.

    5. Add tomatoes, chia seed mixture and blend on spd 10 for 30 secs.

    6. Add water, cornflour and coconut milk to bowl and scrape down sides. Mix on spd 6 for 20 seconds. Scrape down sides and then cook for 10 mins, 100C on spd 1.5.

    7. Once done combine the curry and dumplings together.

    8. Serve with basmati or cauliflower rice.

Tip

* The dumpings can be made ahead of time. They can also be frozen.

*If you like a thicker curry, add another teaspoon of cornflour.
