Thank you for beginning the trend to add 2:5 reciipes to this forum. Also check out the Shepherd's Pie recipe, vegetable stir fry recipe and some of the soups and salads in the Everyday Cook Book. These can fit into the 2:5 fast diet and the calories per serve are listed on each page.
Thanks for a great recipe!
I've just started 5:2, so was very pleased to find this recipe.
I modified it by reducing olive oil to 10g and adding 200g of cauliflower and 100g of carrot.
This makes a very satisfying meal at 280 calories per serve.
It will definitely be one of my fast day staples over the coming winter.
Nice recipe and very filling. I didn't have any lentils so substitued canned chickpeas and only added a cup of water. Lessened cooking time to 10 minutes instead of 30 minutes. Delicious. A keeper according to my strictly fussy vegetarian 16 year old daughter.
Thanks for a really great recipe. I am trying to loose Christmas kilos by following 5:2 and being able to have recipes that I can use for that purpose is great! As I didn't have all the ingredients and the correct amounts I substituted Kale for the Spinach and combined French Lentils with Red Lentils. I had to cook for an extra 20 mins because of the French Lentils, but it was well worth it. I ate a small serving on it's own and served it with rice for my son.
