Ingredients

Sri Lankan Spinach with Dhal

  • 1 package Frozen spinach
  • 150 g chana dhal (yellow dhal), soaked in water for 4 hours
  • 0.75 tsp turmeric, ground
  • 1 tbsp coconut oil
  • 1 tsp salt, dissolved in 60ml warm water
  • 2 clove garlic, ground into paste
  • 1 red onion
  • 2-3 thin green chillis, or to taste
  • 12 cm piece pandan leaf, cut into 3cm pieces
  • 1 sprig Curry Leaves, (leaves only)
  • 250 g coconut cream

Recipe's preparation

  1. Drain the soaked dhal, then rinse and drain again.

    Put dhal, 500g water and turmeric into TMX and boil 5 minutes / varoma / speed soft MC OFF (or until boiled).

    Meanwhile, take the spinach out of the freezer and leave to thaw.

    Put MC on, then cook 30 minutes / 95 / speed soft (if dhal is not cooked and/or water is not absorbed, cook another 10 minutes).

    Set dhal aside, give bowl a quick rinse.

    Put 2 cloves garlic into TMX bowl, dice 7 sec / speed 8.

    Add red onion, dice 4 sec / speed 4.5 or until diced.

    Put coconut oil in TMX, heat 2 minutes / VAROMA / soft or until heated.

    Add thawed spinach, salty water (that is, 1 tsp of salt in 60ml(3 tbsp/1 quarter cup) of warm water), chillis if using, pandan leaf, curry leaves.

    Cook 5 minutes / 98 / speed 1 or until onion is softened.

    Add dhal and cook 2 miuntes / 98 / speed 1 or until combined.

    Add coconut cream and cook 5 minutes / 95 / speed 1.

    Taste and season with salt if needed.

    Serve with roti.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
